Simple but sooo good!


I know, I know, I've never posted about food before but tonight I thought, why not? Yes, cooking is my other happy place... I've loved to cook since I was a teenager. I'm from Italian decent and many of my childhood memories involve eating, laughing and speaking loudly around a casual dressed kitchen table. Visiting family and friends or guests at our house always meant an endless amount of food, fruit, dessert and something cold to drink on the kitchen table (we had a dinning room but rarely did we use it). So perhaps that's how it all started... none the less, I enjoy pulling together menus for gatherings and whipping it all up! I have to admit since kids I don't fancy cook as often as I did before. I have a handful of family favorites (where there's no recipe but you just do it just like mom did it) and I do recipes. Jamie Oliver, Giada De Laurentiis and Rachael Ray are some of my favorite foodies. Gardon Ramsay is growing on me.

So, onto tonight... I was getting excited just thinking about pulling together this dinner so I thought I would share it. Mmmm, so simple and so good! Oh, I should mention... I also had some left over roasted chicken which I cut into small cubes and dropped on top of the tomatoes. I think B was surprised that I even pulled out a bottle of wine to enjoy with our meal. I'm not a drinker so I often don't think about the wine pairing part... my bad, I know. Anyway, we enjoyed another 'cheat day'! :)

P.S. In case you're wondering, Liam was at my parents and Evan ate a bowl of mixed veggies (sweet potatoe, squash and broccoli with some cut up grapes, strawberries and cantaloupe for dessert).
