Summer Salads

The onset of spring always makes me feel better. For some reason the freshness of spring always has me eating better and getting more active. I love salads and a brisk walk, but I really don’t do either during the cold months.

Last week I pulled out my favourite summer salad recipes. My favourite? Grilled balsamic chicken on loose leaf lettuce with a olive oil, balsamic & dijon dressing. Simple and delicious. I also enjoy tomatoes with cucumbers and bocconcini cheese but I prefer this with tomatoes from the garden vs. store bought {big difference in taste!}. I also love none leaf salads like… broccoli salad, taco salad, bean salad, tabbouleh salad, pasta salads and I love to experiment with new dressings. Perhaps this summer I’ll take pictures of all the salads I make. Here was my favourite summer salad from last summer… delicious.

And, I really love to eat outdoors. Even though our backyard is an eye sore now, we often enjoy our dinners outside come the warm weather. Here’s a gorgeous terrace I pinned recently from Architectural Digest.

Yes, salads with anything sauteed on them taste so fancy (and are soooo easy to impress with!). Lentil salad and bbq chicken quarters for me tonight!
