Blueberry Peach Crumble

While I haven’t made it to the farm to pick your own strawberries, I did get lucky with plump blueberries and gorgeous ripe peaches this past weekend. Seasonal fruit from local growers are starting to arrive in baskets here, and I confess, I go overboard. Although, is four pounds of blueberries and a small basket of peaches really overboard? Well, my boys thought so - until they enjoyed handfuls of fresh blueberries, blueberry crumble with vanilla ice cream and this blueberry peach crumble. Sunday morning we enjoyed breakfast al fresco and this blueberry peach crumble was heavenly.

I needed to use the remaining oats mixture from the blueberry crumble of the night before, so I thought why not. I made them in individual ramekin's to keep the portion small. Two of my three boys, woke to the scent of brown sugar and cinnamon coming from the oven… it was nice treat, for all us. For the recipe I used go here (I received a small booklet in the mail). I did make a few modifications, such as; swapping the cherries and raspberries for peaches, reduced the brown sugar amount and replaced white sugar with stevia (a natural sugar substitute).

Haven't done too much recently... but since it's 4th of July today and B has to work I hope to bake him up something tasty to enjoy after his requested dinner (he wants some lobster, corn and potatoes...)

Yummy! And there's no such thing as too much fresh fruit! :-)

I made my triple-threat cookies to bring to a party last week. Lots of butter, sugar, and chocolate - and oats too, so they must be healthy ;-)
