Banana Bread Bliss

Usually the banana bunch is completely devoured by Fridays, but not this week. Here’s what I made this morning. I didn’t include the walnuts or chocolate chips simply because my little man Liam doesn't like them. This is my go-to banana bread recipe and it’s absolutely delish, only crumbs remain by day 2. Here’s the recipe so you can try it yourself… enjoy!

What you will need:

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 cup bananas (3 very ripe bananas)
  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts (optional)

Cream butter and sugar together. Beat in eggs one at a time, beating until smooth. Add mashed bananas and blend in. In second bowl, stir flour with baking soda, baking powder, salt and nuts. Add banana mixture, stirring only to moisten.

Transfer to 9 x 5 x 3 inch loaf pan. Bake in 350 degree oven for about an hour, until toothpick comes out clean. Let stand 10 minutes. Remove from pan and place on cake rack to cool.

Banana Chocolate Chip Bread: Add 3/4 cup of semi-sweet chocolate chips.
